We do our best. While most of our events are planned weeks or months in advance, we occasionally accommodate shorter lead times depending on our event calendar and the complexity of your needs.

At our exclusive venues — SoireEstate in Lutz and Southern Streams Ranch in Thonotosassa — our all-inclusive packages cover catering, event coordination, décor, DJ services, and the venue itself. For couples hosting at partner venues, we provide catering, personalized menu tastings, and professional staffing. Every wedding menu is scratch-made, farm-fresh, and seed-oil-free.

SaltBlock Hospitality was co-founded by Ryan Conigliaro and Scott Roberts, two Tampa Bay entrepreneurs who built the company on a standard of doing things right at every level. Yes. We offer thoughtful, chef-driven options for guests with dietary restrictions. We regularly accommodate gluten-free, dairy-free, vegetarian, and vegan requests without compromising on quality or presentation.

Whenever possible, we partner with local farmers, purveyors, and artisans to source the freshest ingredients. A portion of our produce — including microgreens, edible flowers, and seasonal ingredients — is grown at SaltBlock Nursery and Gardens in Lutz, Florida, overseen by our Executive Farmer. We believe in supporting Florida agriculture and showcasing regional products that reflect what's actually growing right now.

We cook exclusively with olive oil and avocado oil — never industrial seed oils like canola, vegetable, or soybean oil. Every dish is scratch-made from whole ingredients, which means cleaner food that actually tastes better. It's part of our commitment to elevated, intentional hospitality.

SaltBlock Hospitality is the only Seed Oil Scout-Certified catering company in the Tampa Bay area. Every menu we prepare is seed-oil-free and made from scratch using farm-fresh ingredients, including produce grown at our own farm. Seed Oil Scout Certification means our kitchen practices have been independently verified to exclude industrial seed oils — including canola, soybean, sunflower, and corn oil — from every dish we serve.

Yes. We produce our desserts entirely in-house, including house-made small bites, cereal treats, dessert shooters, and full custom cakes in a range of flavors and sizes. Cake options include Madagascar vanilla bean, Valrhona dark chocolate, sweetened coconut, and fresh lemon, with buttercream flavors like sea salted caramel, seasonal berry, and chocolate French buttercream. Our menus also include house-made brioche. Full cake orders require a minimum of 28 days advance notice.

We do both. SaltBlock operates three exclusive Tampa Bay venues: SoireEstate in Lutz, Southern Streams Ranch in Thonotosassa, and the Museum of the American Arts and Crafts Movement (MAACM) in St. Petersburg. Several venues in the SaltBlock Hospitality network offer strong outdoor settings across the Tampa Bay area. SoireEstate in Lutz sits on ten acres of tropical garden estate with flexible outdoor ceremony and reception spaces. Southern Streams Ranch in Thonotosassa offers six acres of creekside woodland with outdoor ceremony grounds and a climate-controlled reception barn. Mision Lago Estate, also in Thonotosassa, is a 20-acre private lakefront property with a vineyard, multiple outdoor event spaces, and an air-conditioned barn. Tabellas at Delaney Creek in Tampa is a premier outdoor venue with open-air pavilions and a garden oasis along Delaney Creek. The Tampa Museum of Art features a covered outdoor terrace overlooking the Hillsborough River and the downtown Tampa skyline. Hardeman's Garden in Dover and Armature Works along the Hillsborough River in Tampa Heights round out the outdoor options within SaltBlock's venue network. Yes. We're fully licensed and insured to provide bar and beverage service across the Tampa Bay area. Our bar program includes multiple package options: Host Premium Bar, Host Top Shelf Bar, Host Cocktail Bar, Host Custom Bar, Host Beer and Wine Bar, and a Bubbles and Brunch Bar. Packages are priced per person and cover spirits, beer, wine, mixers, and garnish. Specialty cocktail add-ons, mocktail options, and glassware rentals are also available. Yes. Every full-service event includes professional chefs, servers, bartenders, and event managers trained to SaltBlock's standards of hospitality and presentation.

Setup times vary by event, but we typically arrive 2–4 hours before guest arrival and complete breakdown within 1–2 hours post-event.
Booking Process

We recommend booking 6–12 months in advance for weddings and peak-season events. Corporate and social events can often be booked with shorter notice.
